Ingredients:
6 Chicken Breast
Three 14oz cans of Coconut Milk (full fat)
6 Tablespoons of Coconut Sugar
3 Tablespoons of Coconut Oil
5 Tablespoons of Curry Powder
1.5 teaspoons of Salt
2 Red Bell Peppers – Chopped
6 Cups of Mixed Vegetables (I like the Organic Frozen Normandy Blend from Costco which includes broccoli, carrots, and cauliflower)
Directions:
Toss all of the ingredients together in a large pot, stir to combine, and simmer for approximately 45 minutes. This “one pot” meal is easy, healthy, and delicious!
